More Room to Toss, Stir and Cook
A wok isn't just a wider pan — it's a different shape. The high, sloped walls give you more usable volume than a frying pan of the same diameter, and they're designed for a different style of cooking: tossing ingredients, moving food quickly around the pan, and keeping sauces and juices contained rather than spilling over the edge.
That extra wall height makes the wok well suited to stir-fries, noodles, fried rice, and larger vegetable dishes where ingredients need room to move. It's also useful for one-pan meals where you're combining proteins, vegetables, and a sauce in the same cook.
The flat base sets this wok apart from traditional round-bottom designs. A flat base sits directly on compatible modern cooktops without needing a wok ring, giving it more stability and broader cooktop compatibility. See Why a Flat-Base Wok? for more detail.
If you already own the Titan Frying Pan, the wok isn't a replacement — it's a complement. The frying pan handles everyday searing, eggs, and quick sautés. The wok handles the dishes where higher walls and tossing matter.
Why a Flat-Base Wok?
Traditional woks were designed with round bottoms for specific burner shapes — typically a wok burner or an open gas ring that cradles the curved base. That shape works beautifully on the right equipment, but it's less practical on many modern domestic cooktops.
A flat base changes that. It sits directly on compatible flat cooktop surfaces — including gas, electric, ceramic, and induction where the construction supports it — without needing a separate wok ring. That means greater stability, more consistent contact with the heat source, and broader cooktop compatibility.
The trade-off is that a flat base has a smaller direct contact area than a round-bottom wok on a dedicated wok burner. The flat cooking surface at the base of the wok is smaller than the top diameter — check the specifications for the actual flat-base diameter of each size.
A flat-base titanium wok is a practical, versatile choice for home kitchens. It is not designed to replicate the exact cooking behaviour of a traditional carbon-steel wok over a powerful commercial burner. Performance depends on cooktop power, pan size, batch size, heat management, and ingredient moisture.
How Titanium Food Release Works
An uncoated titanium wok doesn't behave like a fresh PTFE-coated non-stick pan. It doesn't rely on a chemical layer to prevent sticking. Instead, food release depends on heat control and cooking technique — which matters particularly in wok cooking, where ingredients move quickly and temperatures shift rapidly.
When the wok is preheated correctly and food is added at the right temperature, proteins release from the titanium surface once they've formed a crust. A small amount of cooking fat helps create a layer between the food and the surface, especially for sticky ingredients like noodles or eggs.
Overcrowding the wok is the most common cause of sticking. When too many ingredients are added at once, the surface temperature drops, steam builds up, and browning suffers. Cooking in batches — adding ingredients in stages — keeps the heat where it needs to be.
Titanium cookware can provide effective food release when used with suitable heat control and cooking technique, but an uncoated titanium surface should not be expected to behave exactly like a fresh PTFE-coated non-stick pan.
Getting the Best Results From Your Wok
A few techniques will help you get the most out of your titanium wok.
Preheat Appropriately
Use appropriate heat based on manufacturer guidance. Titanium conducts heat efficiently, so give the wok a minute or two to warm up before adding oil or food. Avoid heating an empty pan excessively.
Prepare Ingredients Before Starting
Wok cooking moves quickly. Have everything chopped, measured, and ready before you turn on the heat. Once the wok is hot, there is no time to stop and prep.
Avoid Overcrowding
Give your ingredients room. Overcrowding traps steam and reduces browning. If cooking a large batch, work in stages rather than filling the wok all at once. A larger wok helps with larger portions, but excessive batch sizes still cause problems.
Add Ingredients in Stages
Start with ingredients that need longer cooking time — denser vegetables, proteins — then add quicker-cooking items later. This keeps everything finishing at the right time.
Toss or Stir Regularly
Take advantage of the high walls. Tossing moves food through the hottest part of the wok and prevents burning. The sloped sides are designed for this — use them.
Let Proteins Brown Before Moving
When searing meat or tofu, let it sit briefly to form a crust before stirring. Trying to move it too early causes sticking and tears the surface.
Deglaze or Finish Sauce
When the recipe allows, add liquid — stock, wine, or sauce — to deglaze the base. The liquid lifts fond from the surface and builds flavour. The high walls contain the splatter.
Cool and Clean Correctly
Let the wok cool before washing. Sudden temperature changes can affect the metal. Wash with warm water and mild detergent. Abrasive sponges are safe — there is no coating to damage.
High-Moisture Foods
Frozen ingredients, wet vegetables, and large volumes of sauce lower the surface temperature of the wok and can change browning results. Pat wet vegetables dry before adding, thaw frozen ingredients where practical, and add liquid in stages rather than all at once.

Why Titanium for a Wok?
Titanium is valued in cookware for its durability, corrosion resistance, and relatively light weight. It doesn't react with acidic foods, and it doesn't require a sprayed non-stick coating to function as a cooking surface.
The cooking surface is the titanium itself. There's no chemical layer to scratch, wear off, or degrade over time. Metal utensils can be used without damaging a coating, and the wok can go in the dishwasher without concern for a coating's integrity.
For a wok — which sees high heat, rapid temperature changes, and constant stirring — these characteristics matter. A surface that doesn't wear out with normal cooking and cleaning is well suited to the demands of stir-fry and wok-style cooking.
Wok or Frying Pan?
Each has its strength. The frying pan is the better everyday first purchase; the wok is better when higher walls, tossing, and volume matter.

Care for Your Titanium Wok
Before First Use
Wash the wok with warm water and mild dish soap. Dry thoroughly. Your wok is ready to use — no seasoning is required.
Everyday Cleaning
Hand-wash with warm water and dish soap. Abrasive sponges and steel wool are safe — there is no coating to damage. The wok is also dishwasher-safe.
Stuck-On Sauces
Soak in warm water for a few minutes. For stubborn residue, use an abrasive sponge or steel wool. A paste of baking soda and water can help with stubborn spots.
Oil Residue
If oil builds up on the surface, wash with warm water and dish soap. For stubborn residue, a mild abrasive cleaner can be used — there is no coating to damage.
Heat Discolouration
Titanium can develop heat tint (a subtle colour change) with use. This is cosmetic and does not affect cooking performance. It can be cleaned with a mild abrasive cleaner if desired.
Dishwasher Guidance
The wok is dishwasher-safe. Hand-washing with warm water and dish soap is also fine and may help preserve the exterior finish over time.
Handle Cleaning
Wipe the handle with a damp cloth. If the handle has food residue, wash with warm soapy water and dry thoroughly.
Flat-Base Care
Keep the flat contact surface clean. Customers using glass or induction cooktops should wipe away any oil or carbon buildup on the base before use. Avoid dragging the wok across delicate glass surfaces — lift it instead. Let the wok cool before washing the base.
Storage
Stack with care. If stacking cookware inside each other, a soft cloth or pan protector between them prevents scratching of the exterior finish.
Heat Control
Use appropriate heat based on manufacturer guidance. Titanium conducts heat efficiently, so high heat is rarely necessary. Avoid heating an empty pan excessively. Avoid sudden temperature changes — let the wok cool before washing.

What Size Wok Should I Buy?
Titan currently offers the wok in 12 in / 30 cm. The key measurement to understand is the difference between top diameter and flat base diameter — this matters for cooktop compatibility. Choose based on your household, hob and cooking style, and remember that overcrowding matters more than size.
Read GuideWok vs Sauté Pan: What's the Difference?
A wok has high sloped walls for tossing and stir-frying; a sauté pan has deeper, more vertical walls for sauces, simmering and family meals. Both are titanium with the same cooking surface — the difference is entirely in the geometry and what each shape does best.
Read GuideFrying Pan vs Wok: Which Should You Choose?
Choose a frying pan for general everyday versatility — searing, eggs, vegetables and one-pan meals. Choose a wok when high sloped walls and ingredient movement matter more — stir-fries, noodles and large-batch tossing. Neither replaces the other entirely.
